Update (March 2026): I made a few small updates to the calculator to better align with the original recipe, including slight adjustments to the default baker’s percentages (yeast and sugar) and dough thickness calculations. You may notice minor differences in the outputs, but the overall formula remains the same.
This calculator assumes there are 120 g in 1 cup of flour
