- 250g dough ball = 11″ (28-29cm) pizza – medium size
- 280g dough ball = 14″ (35cm) pizza – maximum for traditional size
Pizza Specifications
- Diameter range: 9-14″ (22-35cm)
- Edge (cornicione) thickness: 0.4-0.8″ (1-2cm)
- Center thickness: no more than 0.1″ (0.25cm)
- Shape: round with puffy rim
Final Shaping
- Press dough from center outward using fingertips
- Rotate and turn the dough while shaping
- Maintain thickness requirements (center ≤0.1″ (0.25cm), rim 0.4-0.8″ (1-2cm))
