Chicken and Back Bean Salad with Chipolte Vinaigrette

Ingredients

For the salad:

  • 3 cups romaine lettuce shredded (or iceberg or a combination)
  • 1/2 small red bell pepper sliced thinly and grilled
  • 1/2 small onion sliced thinly and grilled
  • 1/4 cup Mexican cheese blend shredded
  • 1/4 cup black beans cooked
  • 1/4 cup chicken grilled and cubed or shredded
  • 1/4 cup guacamole optional for serving
  • sour cream optional for serving

For the dressing:

  • 1/4 cup red wine vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon fresh oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon minced chipotle pepper in Adobo sauce
  • 1/4 cup salad oil canola or vegetable oil recommended

Instructions

  • Arrange salad ingredients on a large plate or bowl by layering ingredients on top of lettuce.

To Make the Dressing

  • Combine all the salad dressing ingredients in a small jar, cover and shake.

To Assemble the Salad

  • Drizzle dressing on top of salad.
  • Serve with sour cream if desired.
