An easy pineapple salsa recipe, made from six simple ingredients plus salt and pepper. Use this to top grilled chicken, fish, or even a burger. Maybe some fish tacos or scrambled eggs?

Ingredients

  • 1 large pineapple (or 2 small pineapples)
  • 1 small red or orange bell pepper (or 1/2 medium pepper)
  • 1/2 medium red onion
  • 1 small jalepeno (seeded)
  • 3 cloves garlic
  • 1 small bunch cilantro
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  • Cut a fresh pineapple (core and then cut off the rind)
  • Chop the pineapple into small pieces and place into a large bowl

  • Clean and chop the remaining ingredients (peppers [bell and jalapeno], garlic, onion, cilantro
  • After chopping, add all the ingredients to the pineapple
  • Add salt and pepper or season to taste
