Easy One-Bowl Fudge Brownies (Crackly Shiny Top!)

The easiest one-bowl brownie for a quick dessert! Nothing like from scratch baking - these homemade brownies use the microwave to prep the batter in a snap.

Equipment

  • 9 inch square baking pan or disposable pan (line with parchment or aluminum foil for easy reusing)

Ingredients

  • 1 cup unsalted butter (2 sticks)
  • 1 cup chocolate chips semi sweet or dark chocolate
  • 1.5 cups sugar
  • 4 eggs
  • 1 tablespoon vanilla
  • 1 cup flour
  • 1/2 cup cocoa I prefer Dutch process, use what you have
  • 1 teaspoon salt
  • 1 cup walnut pieces optional

Instructions

  • Prepare a 9 x 9 baking pan by lining with parchment or aluminum foid
  • Preheat oven to 350 degrees (325 degrees if using glass pan or dark colored pan) and place rack in center of oven.
  • Add butter, sugar, and chips to large microwave proof bowl and melt in 1-minute increments. I typically do this 3 times for a total of 3 minutes. You must stir well between each minute interval.
  • Remove from heat and stir in the eggs and vanilla, beating well with a wire whisk between the addition of each egg. Beat at least 20 times between each addition.
  • Stir in the flour, salt, and cocoa powder. Whisk gently if needed to remove lumps. Add optional nuts and stir in.
  • Pour into prepared pan and bake in center of oven for 40 to 45 minutes or until tops cracks.
  • If you find the brownies are slightly undercooked you may return to the oven and bake until middle is firmer.
