Ingredients

  • 3 cups hash browns thawed
  • 1 lb Italian turkey sausage nutrition calculated using Italian turkey sausage
  • 1 small red pepper pepper diced (reserve a couple tablespoons after cooking for garnish)
  • ½ small green pepper diced
  • 1 small onion diced
  • 6 large eggs lightly beaten
  • 1 cup milk or evaporated milk
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper adjust to taste
  • 1 cup cheddar cheese shredded (or mozzarella, provolone)

Optional Garnish

  • chopped parsley

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • In a large skillet over medium heat, cook the breakfast sausage until it's browned and cooked. Break it into smaller crumbles as it cooks.
  • Sauté the vegetables in the same skillet with a bit of oil until they're softened.
  • In a separate bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  • Add the hash browns and the cooked sausage with vegetables to your casserole and mix everything to combine.
  • Pour the egg mixture evenly over the sausage veggies and hash browns.
  • Sprinkle the shredded cheddar cheese over the top.
  • Bake in the oven for 40 to 50 minutes or until the casserole is set in the center and the top is golden brown. Begin checking at 35 minutes.
  • Remove the casserole from the oven and let it cool for a few minutes before slicing.
  • Garnish with parsley for a fresh and vibrant touch
