Ingredients
  • 1 avocado, cored, peeled, and chopped (about 1 cup)
  • 3 small tomatoes, chopped (about 1 cup)
  • 1 small cucumber, chopped (about 1 cup)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • ¼ teaspoon table salt (or to taste)
  • black pepper to taste
Instructions
  1. Combine tomato, avocado, and cucumber in medium sized bowl
  2. Toss mixture with lemon juice and olive oil
  3. Season with salt and pepper
