Easy, healthy and delicious salad featuring lentils

  • 1 teaspoon olive oil, plus more for dressing
  • 2 tablespoons minced onion
  • ¼ cup cooked lentils
  • 4 sun dried tomatoes (oil packed), chopped
  • 1.5 tablespoons crushed walnuts
  • 4 cups spring mix
  • salt
  1. In a small saute pan, heat 1 teaspoon olive over medium-high heat and cook onion for about 1 minute or until fragrant, softened, and slightly translucent
  2. Add cooked lentils and sun dried tomatoes to the pan and continue cooking until heated through - about another minute or 2
  3. Remove from heat, let cool slightly and add walnuts
  4. Place salad greens on serving dish, top with lentil mixture, and drizzle with additional olive oil and salt to taste
