Apple Turkey Meatloaf

Get ready to spice up your dinner routine with this awesome apple turkey meatloaf. It’s packed with all the good stuff – lean ground turkey, loads of fresh veggies, and a surprise twist of sweetness from mango chutney (or hey, apricot or peach jam if that’s what you’ve got). The recipe is based on the famous Oprah turkey burger, which she declared the best turkey burger in the world! Who am I to argue with her?

It’s a relatively easy meatloaf to make and is a perfect part of a comfort meal.

Ingredients include ground turkey, garlic, onion, apple, celery, lemon zest, Tabasco sauce, canola oil, salt/pepper, and dried parsley. Not shown (an optional ingredient) is mango chutney or apricot preserves, which lend a very slight sweetness.

How to Make

Preheat your oven to 400 degrees Fahrenheit. Heat a large sauté pan over medium-high heat and add 1 tablespoon of oil, along with the onion, celery, apple, and garlic. Sauté for 6 minutes, then cover, reduce heat to medium, and continue cooking for 10 more minutes.

Once cooled, combine this mixture with the thyme and lemon zest and also the chutney or jam if using, in a large bowl.

Form the meatloaf into a rectangular shape and place it in an oven-safe pan.

Bake for 45 to 50 minutes or until it reaches an internal temperature of 165 degrees Fahrenheit, ensuring it’s fully cooked and ready to serve.

Ingredients
 

  • 1 pound ground turkey
  • 1/2 cup chopped celery (about 2 stalks per 1/2 cup)
  • 1 cup chopped onion (1 cup is about 1 small onion)
  • 1 cup chopped apple (1 cup is about 1/2 large apple)
  • 3 tablespoons canola oil (divided)
  • 1 teaspoon lemon zest
  • 1 garlic clove
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Tabasco sauce
  • 2 tablespoons Major Grey’s mango chutney or apricot preserves (optional)
  • 1 teaspoon dried parsley

Instructions
 

  • Heat a large saute pan over medium high heat and add 1 tablespoon oil, onion, celery, apple, and garlic.
  • Saute for 6 minutes then cover reduce heat to medium and cook for an additional 10 minutes
  • Allow vegetable mixture to cool and then combine with remaining ingredients in a large bowl
  • Preheat oven to 400 degrees
  • Form meatloaf into a rectangular loaf and place into an oven safe pan (I used cast iron)
  • Bake for 45 to 50 minutes or until an instant read thermometer reads 165 degrees

    I have so many food restrictions–can’t eat tomatoes or ketchup, which are in almost every meatloaf recipe, allergic to eggs, can’t eat dairy, and sensitive to wheat so I try to avoid bread (no breadcrumbs). This is one of the very few recipes that fit the bill. And it was delicious!!! Even my husband raved, and he can eat everything. It’s staying in the rotation!! Thanks, Marie. You’re a lifesaver.
